About The French Exit 

The French Exit is Brisbane’s ode to Paris, alive with clatter, candlelight, and the European perfume of butter and wine. The Role

In preparation for the opening of The French Exit we are looking for an experienced and motivated Junior Sous Chef. In this role, you will support the Senior Sous Chefs and Head Chef in leading the kitchen team, maintaining consistency across prep and service, and ensuring food quality meets the highest standards. You will also guide and mentor junior chefs, contribute to food safety and compliance, and play an important role in building the kitchen culture and efficiency of a brand-new venue.

• Proven experience as a strong Chef de Partie or existing Junior Sous Chef in premium venues
• Ability to oversee prep, service, and section organisation with consistency and attention to detail
• Confidence in supporting and guiding junior chefs, apprentices, and kitchen hands
• Solid understanding of food safety, WHS, and allergen management
• Calm and proactive leadership style with strong collaboration across the teams 
• Drive to progress into a senior leadership role within the kitchen
