The Role
In preparation for the opening of The French Exit we are looking for a Bar Manager to lead the team. You will lead the bar from pre-opening through setting standards for product, service and team culture. From building systems and training to owning inventory, cash controls and supplier relationships, you will shape the identity of a new venue while delivering a calm, guest-focused service.
- Proven experience leading a bar team in premium bars
- Confident in managing service, coaching performance and guest recovery
- Ownership of beverage stock control, ordering and monthly stocktake with variance reporting
- Strong administration across invoicing, POS accuracy, cash-ups and end-of-night reporting
- Ability to build and maintain recipes, specs and SOPs with consistent execution
- Skilled at training bar staff on products, techniques and responsible service standards
- Supplier and stakeholder management, including tastings, pricing and deliveries
- Clear communication, strong organisation and effective roster planning
- Understanding of liquor licensing, WHS and RSA compliance
- RSA certificate required
- Demonstrates exceptional skill in crafting cocktails with precision, consistency, and creativity, utilising advanced techniques to elevate the guest experience.
- Has a track record of designing innovative, balanced, and commercially successful cocktail menus that reflect current trends, seasonality, and brand identity.
- Possesses in-depth understanding of spirits, wine, and other bar ingredients.
- Engages actively in the local and global bar community, participating in events, competitions, or collaborations, and stays connected with industry trends and networks.
